INGREDIENTS:
8-10 SLICES OF BACON
2 TABLESPOONS OF VEGETABLE OIL
1 YELLOW ONION, CHOPPED
2-4 GARLIC CLOVES, MINCED
1 POUND COLLARD GREENS, CUT INTO 2” CHUNKS (OR 1 LARGE BAG)
4 CUPS OF CHICKEN BROTHER (6 CUPS IF SIMMERING FOR MORE THAN 2 HRS)
2 TABLESPOONS BROWN SUGAR
1 TEASPOON SALT & PEPPER
2 TEASPOONS OF SLAP YO MAMA (MORE/LESS TO TASTE)
INSTRUCTIONS
1.) Add bacon to your pot on medium-high heat & cook until crisp. Remove bacon & place to the side to cool.
2.) Leave the bacon grease in the pan & turn heat down to medium-low. Add chopped onions & minced garlic, cooking for 5-7 minutes, stirring frequently until softened.
3.) Add collard greens to the pan & mix as well as you can to coat them in the grease & onion mixture.
4.) Add chicken broth, brown sugar, salt/pepper, & Slap Ya Mama. Stir well & cover. Reduce heat to a simmer & cook for 2 hours or until tender. The longer you cook the more flavor adsorbed.
Low & slow is the way to go! Everyone in my family LOVES these greens...they are sweet & spicy!
